Cabernet Sauvignon / Merlot

R195

Description

Vintage: 2018

Origin: Stellenbosch

Varieties: Cabernet Sauvignon 63% / Merlot 37%

Tasting Notes:
This wine displays aromas of blackcurrant, chocolate and cedar wood. The palate is rich in texture with flavours of ripe berries and hints of mocha. The tannins are firm in structure and in balance with the fruity finish to give the wine a smooth texture.

Vintage Conditions:
2018 was an outstanding harvest in the Stellenbosch area that produced wines of great character. The grapes are from our Groenkloof and Keerweder farms on the slopes of Stellenbosch Mountain. The soil is composed of decomposed granite. The vines get full sun which allows for optimum development of rich berry characters and ripe tannins in this blend.

Fermentation and Ageing:

Although Cabernet Sauvignon and Merlot are great blending partners we ferment and age every component of both varieties of this blend separately until final blending just prior to bottling. This wine was aged in 30% new French oak barrels with the remainder being second and third fill barrels for 18 months. The 2018 blend consists of 63% Cabernet Sauvignon and 37% Merlot.

Food Pairing:

Best with beef, lamb and game dishes. Will also pair well with dishes enhanced with black pepper and cloves. Other great pairings include rich duck dishes, quail, roast lamb and beef.
