A fine yet powerfully structured palate that fills the mouth with richness and freshness while balancing the fruit beautifully, lingering into a complex finish. Strong aromas of fresh cassis and red berry fruits dominate the nose accompanied by nuances of mocha and tobacco notes.
A noble variety with opulent fruit, great structure and an amazing ability to age well, that’s Cabernet Sauvignon. The nose presents a full bouquet ranging from red berries, cherry tobacco and eucalyptus supported by hints of oak and cigar box aromas. The palate has density and concentration with its firm tannins and full body along with a well balanced acidity.
The season leading up to the harvest period provided excellent conditions for optimal ripeness and flavour concentration. This year the harvest started earlier than expected, 10 days to be exact, however, it ended approximately 10 days later. These longer ripening conditions therefore provided for excellent fruit concentration and elegance.
Fermentation and Ageing:
This wine was fermented in open stainless steel tanks with gentle pump overs performed twice daily to limit the extraction of aggressive tannins – as it is very well know that Cabernet Sauvignon can often present tannins in abundance. After primary alcoholic fermentation the wines underwent malolactic fermentation followed by 12 months ageing in 30% new and the remainder second fill French oak barrel to produce supple, rounded tannins.
Best with beef, lamb and game dishes cooked in a concentrated sauce full of flavour. Always remember to avoid spicy flavours but rather to complement the wine with cloves, black pepper and rosemary, also great with pepper crusted tuna.
