The blend of Cabernet Sauvignon with Merlot is like an excellent marriage where one partner compliments the other and brings out the best in them. Merlot is soft and fleshy, where Cabernet Sauvignon is sterner and more austere. The Merlot brings bright, soft fruits like cherry, raspberry and plum, while the Cabernet Sauvignon offers fine structure, hints of cassis and a lingering after taste. Together the two create a fruity, elegant and classy partnership.
We strive to create the perfect blend between the two wines. This takes time. We start by lovingly caring for our vineyards, and monitoring their growth through the spring season. The canopies are kept as open as possible to allow the right amount of sunlight to ripen the berries. We taste the grapes daily to determine the optimum picking time, which could be a Sunday morning! There is no waiting until Monday, we pick when the grapes tell us they are ready. The bunches are gently destemmed, and then we spend many hours sorting the berries and selecting the best ones for our wine. We ferment the Merlot and the Cabernet separately in open top fermenters, where we can perform gentle punch-downs twice per day. After fermentation the wine is racked into barrels where it spends the next 18 months maturing. We use about 25% new oak, and every barrel is French and made by hand by some of the best cooperages in the world. We only make up the final blend of the wine right before bottling. Blending is where we can create something truly special from the delicious components that we have nurtured from the very start.

We are very happy with the recent performance of this bright and beautiful blend! It is winning over the hearts of many wine lovers across the globe! Our 2010 won a Double Gold at the China Wine Awards, and our 2011 won a Gold at the Michelangelo International Wine Awards.
