Francois Chartier, Dornier Cocoa Hill Red 2007

Second Release of Collector's Label to Celbrate Dornier's Aviation Heritage
2010-06-07
Dornier Donatus 2007 Do-X Edition. Due to the slightly milder vintage conditions in 2007, the growing cycle of the Cabernets was substantially lengthened. This was ideal for the grape maturity and resulted in wines with more elegance and poise than those of warmer vintages. Aromas of spice, cassis, tobacco and hints of sweet fruit dominate the complex nose. Characteristics of the vintage conditions are evident on the palate with its full yet firm tannin structure and fresh flavour profile of red fruits with a dry, lingering finish.

Release of Collector's Label to Celbrate Dornier's Aviation Heritage
2010-06-07
Dornier Cabernet Sauvingon Merlot 2008. With this traditional yet very successful partnership of these two noble varieties, one is able to appreciate both varieties inherent characteristics. Cabernet Sauvignon offers the masculinity and body to the blend along with if fine red berry aromas whereas Merlot offers its elegance and charm with its more refined, feminine tannin structure and subtle violet nuances. A succulent yet well balanced palate with a lovely lingering aftertaste.

Dornier Wine's Love for Chenin blanc, Chapter Four
2010-06-07
Dornier Wines has added a fourth wine to it's Chenin blanc collection. The Dornier Natural Sweet Chenin Blanc 2007 'Froschkoenig' is a truly unique sweet wine. A wine with an alluring colour and an alluring nose dominated by honey, preserved peach and white pear, with nuances of dried apricot and roasted nuts. The highly viscous palate possesses a great sweet sour balance between sugar and the acidity with ripe yellow fruits and an extremely long aftertaste that leaves one desiring more. Previously Dornier has released the Dornier Cocoa Hill Chenin Blanc, the Dornier Swartland Chenin Blanc, and the Dornier Donatus White, a wooded Chenin Blanc / Semillon blend. The Wine is only available from the cellar and online for Club menbers.

Wine Enthusiast Magazine: Dornier Donatus 2006 (Stellenbosch) This alluring Cabernet Franc- Cabernet Sauvignon blend starts with aromas of black cherry, violets and black currant, leading into waves of black fruit and spice. Structured but smooth, it has a classic, ageable quality. Good minerality gives it an upright character. Delicious now, but definitely can be held. Imported by Worthwhile Wine Company.

At a cellar door price of R110, this is a very classy white and a perfect bridge between Chardonnay (of which, supposedly, people are tiring, though I doubt it) and too much greenery, finding an excellent balance of a body that punches above its weight, but with delicious points of honeyed fruit. Angela Lloyd on Dornier Pinotage and Donatus White
2009-02-20
GRAPE.CO.ZA: The Dornier Pinotage 2007 (R77) 16.5 couldn't be more different; it is an elegant, sophisticated wine with sound ageing potential for eight to ten years. The deep ruby colour is layered and limpid; a touch of cedary oak seasons the quiet, dark berry fruit, reflective more of its pinot than its cinsaut parentage. A refreshing minerality lifts the rich savouriness, which flows unhindered to a lengthy finish thanks to the beautifully managed, polished tannins. Careful oaking, all French and 11% new for a year, does the correct job of enhancing the wine. We enjoyed it at a coolish 16-17ºC. Also impressive is the Dornier Donatus White 2007 (R96) 16, a blend of chenin blanc and semillon (74/26). Each variety is barrel-fermented in a mix of new and used French oak and aged on the lees for a further seven months before blending and bottling. Like all quality blends, the varieties create an homongenous and interesting whole; a whiff of new oak vanilla is presently noticeable but should marry as the wine ages. Medium-bodied and refined with a fine, mineral core, it leaves the impression that greater dimension is there to unfold over the next four to five years. A worthy addition to the list of top white blends. http://grape.co.za/al.htm#more%20recent

Alan Mullins on Dornier Wines and the Dornier Bodega Restaurant
2009-02-20
We were royally treated at Bodega yesterday. JC gave us a personal wine tasting despite being busy with the harvest and fighting fires on the farm. The wines were really good with the Donatus blend quite spectacular. I will certainly be promoting them. The restaurant exceeded any expectation. We really enjoyed the crispy calamari starters, my friend raved about the pork belly and I was in heaven when I discovered perlemoen on the menu. It was such a varied and stimulating menu that I cannot wait to go back. Friendlier service doesn't exist and the view from the stoep rounded off a perfect experience. Thank you very much for setting up a wonderful visit to a special place.

winecurrent.com: 4 Stars for Dornier Donatus 2004
2009-01-06
Dornier ‘Donatus’ 2004 WO Stellenbosch $24.95 (606020) (Previously reviewed in winecurrent) This red blend, Cabernet Franc and Merlot, was aged 18 months in new French oak. There are mixed spice, smoky oak and aromatic bitters aromas on the alluring nose. The flavours are expressive and concentrated with succulent dark cherry, cassis and hints of tar to the fore. It’s medium in weight and texture sporting ripe supple tannin and a lingering nicely balanced finish of sweet (14.5% alcohol) rich dark berry fruit flavours. (VH)

Brian Berkman: Dornier's New Chef
2008-11-05
The view of the mountains from Dornier wine estate on the Blaauwklippen, Stellenbosch road is achingly beautiful and I’m pleased to say the food matches perfectly. I have always enjoyed what I’ve eaten at Dornier’s Bodega restaurant but after feasting with new chef Naas Pienaar (whom I stupidly called Morne throughout the meal) the restaurant could be in line for culinary awards. His emphasis is on sourcing farm-fresh ingredients and treating them respectfully with slow cooking that plays pied-piper with flavours drawing them out from the flesh’s deepest recesses. The lamb shoulder, for example is cooked for many hours in a wood-fed oven that it offers up its own scents on a garlic magic carpet. The accompanying carrots and potatoes look and taste beautiful, still glistening from being cooked in duck fat. Madagascan pepper steak is a winner while catch of the day is dressed with vanilla and lime butter reduction. Chef Naas, it seems, has affairs with ingredients. When we dined he’d added fresh porcini to many dishes. Unlike some restaurants where they work the same few ingredients into as many dishes as possible, here, buoyed by his culinary abundance, it reads as generous rather than money saving. He has an impressive CV with Londolozi and three of Cape Town’s five star hotel kitchen’s listed. The proof as always is in the eating and at Bodega you can do so with pleasure and confidence. Be sure to book first. I noticed at least five groups being turned away who arrived without reservations. Bodega at Dornier. 021-880-0557 http://www.brianberkman.com/BlogNo377.htm

Rod Philips of Winepointer about the Dornier Donatus Red
2008-10-22
Dornier ‘Donatus’ Red 2004 WO Stellenbosch, South Africa $24.95 (606020) A blend of 70% Cabernet Franc and 30% Merlot, this is a spectacular, well-structured red that’s dense and rich in flavours and texture. Everything is tight-grained here, from the layered nuances in the flavour profile, through the taut texture, to the fine, ripe tannins. It’s a wine that’s authoritative, and it calls for dense, well-flavoured food, like grilled sirloin steak or red game meat. It’s just ready for drinking now, but you could well hold it a couple of years to give it a chance to open up.

Christoph Dornier dies in Switzerland at Age 69
2008-08-14
Born into a family of engineers, Christoph Dornier new very early that he was different. Art was his first love and against the will of his father, he persisted and became a recognized artist. But even within his chosen field he never followed the trends. He had his very own ways to see things and to paint them. Christoph Dornier was often ahead of his time: he started a foundation for behavioral psychotherapy in Germany in the eighties that has had a deep impact on the treatments with its research and treatment concepts. He was also one of the founding partners of de Zalze Golf Estate in Stellenbosch that has become the prime residential location in the area. His independent mind made him move to Stellenbosch in the turbulent nineties and start Dornier Wines as one of the very early foreign investors. He loved the mystical aspect to wine, its symbolism and beauty. For 14 years he worked on the vision, supported by his children. Christoph Dornier had a life long passion for architecture and the landmark Dornier wine cellar is his legacy in this field. The young generation has already taken over the business, supported by a strong team around winemaker JC Steyn. The unique approach to wine making, the style, the commitment to quality and commercial successes have propelled Dornier Wines into a serious contender for the top ranks in the industry. His wish to see South Africa once more was not fullfilled. Christoph Dornier loved beauty and created beauty for the world after him.

In tune with this quiet, catching-up-on-you aesthetic, there have not been too many wines since the first bottlings in 2002. Wines are sensibly kept back, and those under the full nomenclature (at the top-end, enigmatically-named Donatus) have proven to be sneakily smart.

The Winelands is another gourmet establishment richer with the opening of the Bodega, on Dornier Estate. Situated a ten-minute drive from Stellenbosch, the restaurant aims to combine "old world charm and antiquity with New World sophistication". With a daily varying menu, chef Tullishe Le Roux will place her focus on locally produced ingredients, carefully paired with wines from the Dornier estate. As Raphael Dornier explaines, "The Bodega philosophy is the same as in the winery: For great end products, you need first class ingredients, creativity and a drive for perfectionism." The menu includes a selection of free-range meats, home-made pastas, Alsatian style Flammekueche, and a tasting menu designed specifically around Dornier wines.

2007-10-17
I was out at the Dornier Winery to christen their new Bodega Restaurant – the chef of which is Tullishe le Roux a bright young chef who worked for me soon after coming out of chefs school about 12 years ago. Tullishe one might ask? Her father was a fan of the rock group Jethro Tull! It also gave me a chance to taste the latest releases from Dornier and to revisit some old friends.

Chef Tullishe Le Roux has achieved a happy marriage; simple delicious dishes combine with the excellent wines produced at Dornier. Tullishe draws from free-range meats, uses freshly made pasta and has a deft hand with delectable Alsatian style Flammekueche. Winemaker JC Steyn's delightful wines are perfect to celebrate long summer days. The wine list at Bodega has a clear focus on the Blaauklippen Valley and includes the best examples of the neighbouring farms. www.showcook.co.za

Coup de coeur - Dornier Cocoa Hill
2007-07-12

Dornier becomes member of the Biodiversity & Wine Initiative
2007-01-21
The BWI is a pioneering partnership between the South African wine industry and the conservation sector. The goals are to minimise the further loss of threatened natural habitat, and to contribute to sustainable wine production, through the adoption of biodiversity guidelines by the South African wine industry. One of the strategies of the BWI is to identify and enlist interested producers as members or champions of the initiative, who will implement the biodiversity guidelines, conserve critical ecosystems and incorporate a biodiversity story into their winery experience.

Dornier Wines launches new Cocoa Hill range
2006-11-15
South Africa, Stellenbosch, Summer 2006 / 2007; In a time of seafaring and spice, pirates played in Table Bay...If you'll believe it! A certain Long Ben presented us with abundant inspiration in the creation of the Cocoa Hill wines, two playful and fun-filled new additions to Stellenbosch producer Dornier Wines' acclaimed range. The Pirate The Cape at the time of its Dutch occupation was a fascinating place. The era evokes images of a wild and uncharted continent; mysterious indigenous peoples; ivory sails fluttering above burly wooden ships; and the rich, exotic colours and textures of the treasures of the East - demand for the latter in the West, the very reason for the Cape of Good Hope's existence. This was the world of Long Ben and his gang of erstwhile brutes. Long Ben was a feared English pirate who pillaged ships along the Spice Route and around the Cape at the time of its Dutch occupation, archives dating from the seventeenth century indicate. Following a long line of offences, he eventually had to flee the authorities or face prosecution and ingeniously assumed a new identity under the guise of winegrowing in the Stellenbosch region. Long Ben's grapes grew in deep, dark soils on a hilltop in the Blaauwklippen area - home to Dornier Wines today - which he named Cocoa Hill and was seen peering out to the seas from often& longing for the ocean and his old ways, it is said.

Dan Nicholl: An artist's impression

As an artist, Cristoph Dornier will have worked in a number of different mediums; whether the Swiss artist ever envisioned himself creating a work of art out of a wine cellar is unlikely. But that’s exactly what he has done, and a visit to the Dornier estate in Stellenbosch offers one of the more visually arresting cellars on the South African wine route. www.iafrica.com

Business Day: Dornier - Alchemy of Wine
2006-03-09
IF HE were able, says Christoph Dornier, he would write what he paints. Since he believes he cannot convincingly express himself with words, Dornier’s surrealistic stories — labyrinths of dreams, riddles, mythology, secrets and symbols — are captured, in unfettered colour and imagery, on canvas. Dornier is intrigued by metamorphosis. A large painting of a female torso with the head of Zeus transforming into a two-headed swan overlooks the tasting room at the winery. “The thought that a plant can become a human being and vice versa, a face can become a fire, or a female body, an instrument, is an attractive thought to me. With a paint stroke, an abstract work can suddenly produce an animal. Out of coincidence, something new can develop.”

Dornier Wines Profile in One Small Seed

Combining elegant wines and award-winning architecture, Dornier Wine Estate creatively fuses the opposites of change and stasis, seriousness and pleasure, complexity and simplicity. By Mia Russell
Nestled in the heart of the Stellenbosch Valley and surrounded by lush green mountains, lies the elegant Dornier Wine Estate. Claiming both local and fast-growing international fame for their wines, Dornier is also an architectural gem and in an industry where competition is rife and differences often indistinguishable, the distinct quality and unconventional style of Dornier Wine Estate, sets it apart and places it a cut above the rest.

Dornier Wines wins award for best architecture
2006-01-24
Top-end wine producer, Dornier Wines, has been selected by the Great Wine Capitals Global Network as one of five wine estates worldwide to win a National Award for architecture in their Best of Wine Tourism Awards for 2005. This year’s contest attracted a large pool of entrants from world-famous wine regions throughout the world, including many from Italy, France and Spain. Awards were issued to particularly distinctive wineries that demonstrated exceptional capability to cater for, and welcome, visitors and tourists. A masterful fusion of art with architecture, it was Dornier’s 500-ton winery that attracted the selector’s attention. Mimicking the vision of owner Christoph Dornier - a vision that was realised by architect Johan Malherbe - the winery was completed in late 2003 and now offers a new attraction to visitors to the Winelands. Aesthetically, the winery boasts a New York loft-style feel. Operationally, it’s a masterpiece that’s seen it described as ‘one of the best wineries in South Africa because of its simplicity.’ The sweeping, curved roof reflects the profile of surrounding mountains to blend with the environment. Glassy water from an expansive pond mirrors the roofline and serves to cool the maturation cellar beneath. Industrial materials such as glass, stainless steel, anodised aluminium and wood predominate to give a pared-down, industrial-chic feel. Inside, an administration area flows effortlessly to cellar, maturation cellar and visitors tasting room that couples as a lookout post to the surrounding forest, vineyards, fynbos and mountains. Enormous glass windows flanking the central plaza adjacent to the tasting area allow for non-intrusive transparency into the winemaking process. Here, stainless steel fermentation tanks are suspended and walkways have been widened to prevent a cramped working environment.
